| LeroyBourne The Mexican joint down the road takes this day very seriously, a buddy of mine use to bar tend there, and he said they make margaritas by the 5 gal bucket, and they just go around with a giant ladle filling peoples glasses. He kinda cringed at the activity because it wasn't done with sanitation in mind, but everyone was blasted, so no one cared. |

The recipe of which she speaks: Celebration Chilaquiles 2 teaspoons vegetable oil ½ cup finely chopped white onion 1 clove garlic, coarsely minced ½ cup finely chopped fresh tomato 1 cup prepared mole base 3 cups water or broth 2 tablets Mexican chocolate, broken into small pieces 5 cups tortilla chips 2 cups shredded cooked chicken 1 cup shredded fresh spinach leaves 1 cup Mexican crema 1 cup shredded chihuahua cheese In a medium skillet, heat the oil and saute the onion and garlic until slightly softened and very aromatic. Add the tomato and stir over medium heat 1 minute. Puree in a blender. In a medium saucepan, heat the mole base and water, whisking until smooth. Add the chocolate and stir until melted. Add the puree and stir just to combine. In a 9x13x3 baking pan, layer half the chips, then the chicken and spinach, then ladle the mole mixture over all. Sprinkle with the remaining chips, drizzle the crema and top with the shredded cheese. Bake at 350ª until heated through and bubbly, about 20 minutes. Every bar takes it seriously, in the same way they take St Paddy's seriously. It's an excuse to make ungodly amounts of money. In that respect, it's the most American of holidays. Just last weekend was children's day, earlier this week was May Day, and next week is Miguel Hidalgo's birthday. I guarantee each of those is an excuse to knock off early and get pissed. I love the way Mexicans roll.
