Digusting health drink made from fermented kelp or mushrooms for some, great way to actually get away with drinking vodka at work for others.

All raw kombucha contains a bit of alcohol (usually between 1 and 3 percent)

Never heard of this but, but, isn't 1-3% alcohol more than a "bit"... I mean, most crappy US beers are only like 4-5% alcohol. The article is suggesting that people are making "alcoholic" versions of it, which would imply that the "normal" kombucha is legally sold to all... am I missing something here? Are teens turned on to this legal alcoholic beverage yet?

If someone who isn't used to naturally fermented foods drinks a couple of those, they are almost certainly going to experience 5-6 hours of digestive unpleasantness, during which time they are well advised not to stray more than 30 feet from an available toilet.

Starting making my own sauerkraut/pickles/fermented veggies last summer, and discovered the hard way that you need to ease into it. Got a gut lined with bacterial iron now, though...

Um yeah...it was taken off the shelves for awhile last year because of the alcohol content or some such. I happen to like it but I'm odd anyway.

At first it's like a bad ginger ale but after a few sips it's actually pretty good.

/all kombucha bottles I've seen let you know that some natural fermentation takes place. 1% alcohol would only worry a Mormon.

Kombucha is tea fermented into vinegar. Precursor to vinegar is alcohol.

Mmm kombucha. I used to drink it almost every day, and I've never gotten so much as a buzz from it.

/so if that's what you're looking for, make sure you check the label!

I've heard it's good for crohn's disease and the like. I hate the damned hippies bogarting all the good local food but I may have to go to one of their stores and try some. Ten years of various drugs and a year and a half on humira are taking a toll. I'm willing to try anything I can afford, these days.

I'm pretty sure I've had old apple sauce with a proof of at least 10. Anything fermented is going to generate some alcohol.

There is arguably no one more knowledgeable about mushrooms than Paul Stamets of Fungi Perfecti. Any one with any experience in mushroom cultivating knows the name.

Read what he says about Kombucha before touching the stuff.

"Kombucha" is a Japanese word.

I've never seen it on sale anywhere in Japan, including health food stores, and I've seen fried crickets and raw pig testicles on restaurant menus.

Someone gave me a bottle once, and i spit it out on the first taste. I was going to complain that their tea had fermented in the bottle, but then I found it was supposed to be that way. I never had it again.

I would ask your doc first, the wiki page says there is a potential interaction with Remicade, which I think is pretty close to Humira.

Even back in the day when you couldn't get decent beers in some states like Oklahoma or Utah the available beer was 3.2% beer. Regular Budweiser if 5%abv.

According to this list http://www.realbeer.com/edu/health/cal ories.php 3.5% is about the lowest abv until you get in to the beers technically referred to as "non alcoholic".

Good to know. Humira isn't as potent as remicade. I give it to myself at home in 10 seconds 2x a month instead of every 6-8 weeks for a 6 hour infusion at the hospital.
I think I have an appointment this month so I'll make sure to check with him before I poison myself accidentally.

And also confirmed as having lost at least 2 of your 5 senses. Gueuze. gack.

From the pic in the article, there's an Oolong flavor, which is like doubling up the musty funk of the kombucha. At that point, just call it truffle tea and be done with it.
