I use to write alot of games back when and yeah, 256 colors == 8-bits. I was the lousy screen resolution and CPU/GPU capabilities that required pixelated graphics. It's tough to do anything with a 16x16 sprite

There's a big difference between an 8-bit color depth and an 8-bit system. Examples of the latter include the C64 and Apple II, where you would be lucky to have 16 colors. Everything was pixelated, but the NTSC composite video was fuzzy enough that you didn't really notice it. And that's the way we liked it!
