  • I have way too much Cream Cheese frosting from my triple layer carrot cake.  I froze the icing, hoping it would stop me from eating it.
  • All the pumpkin pie recipes that I've seen make 1 or 2 pies without any left over. Where are they getting their recipes from?

    And haven't they heard of Ziploc bags and the freezer?

    Or a pumpkin cake.  I had this "dilemma" this week and made a quickie one pan pumpkin cake with cream cheese frosting.   That puppy was snarfed up right away.

  • My pumpkin pie recipe is from the 15oz can era, so that's never a problem. The leftover filling I currently have is because the cranberry grape cider pie recipe only needed one cup of cider, and the tail end of the jug that was a little too old to drink fresh turned out to be two cups, so I doubled the filling recipe but only had time and energy to bake the one pie. The rest of the filling is in the freezer awaiting a day when I have a real countertop to roll out a crust on, instead of a chunk of repurposed headboard propped across an unanchored cabinet.

    So yes, leftover pie filling is a thing. It's just never a problem.

    I should add the explanation that it is a one layer cake you can serve out of the pan.  It does take a couple of bowls.   I buy the cheapie tin "disposable" baking pans from the dollar store, because I never get my regular ones back.  Plus, the pan makes it it easy to transport. And can be recycled.   If you're making it for home, none of that matters.
